Foundation Jamón Serrano
The foundation, as a GTS Representation Organ of the Jamón Serrano, is in charge of the protection, improvement, projection and promotion of the quality of the Serrano ham, differentiating it from other cured hams that are not produced according to the standard terms of the GTS.
Therefore it has created a counter-mark that allows distinguishing the true Serrano Ham, to guarantee the maximum quality of the products, to promote the knowledge of the Guaranteed Traditional Specialty and grants prestige to the pieces that hold it.
Only those pieces that meet the minimum requirements can qualify for the denomination of Serrano Ham, and at the same time only the best ones, can distinguish from the counter-mark in the Foundation.

With regard to Serrano ham, it regulates and protects the production methods, the traditional recipes and raw material.
Consortium of Jamón Serrano Español
Serrano Ham produced with high quality raw material, a fresh ham meeting certain technical specifications that establish the quality standard of the Consortium of Jamón Serrano Español and a slow aging process with a final stage of curation in bodega (drying rooms with hot temperature).
The whole process is controlled by a ham master, who is in charge of controlling the duration of the different stages that the Serrano Ham experiences for its proper elaboration.
The objective is to obtain the best product based on the know-how, tradition and experience shown by the Consortium of the Jamón Serrano Español.
