Our Riojano Chorizo shows percentages of unsaturated fatty acids similar to the one of the olive oil or salmon, according to Yolanda Alastrue, researcher of the University of La Rioja.

The Serrano ham contains iron, zinc, calcium, phosphorous, magnesium, vitamin B1, vitamin B2, vitamin B3, vitamin B6 and vitamins of the Group D, therefore it has such a high nutritional value.
Half of its fats are unsaturated. The main fatty acid that constitutes it is the oleic acid. The olive oil is the only food that contains more of this acid than the Serrano ham.
The fats are very important in our organism, since they give us energy, build cellular structures and have fat-soluble vitamins, besides adding color and smell to the food.
